This Colombian Hot Chocolate Basque Cheesecake is simply DIVINE! We’re happy to share with you today one of Dani’s latest creations. She’s infused a Latin touch into the traditional Basque Cheesecake recipe, making it a must-try dessert. This easy-to-follow recipe allows you to share this sweet treat with your friends at your next birthday celebration, baby shower, or dinner party.


A Brief History of Basque Cheesecake

Originating from San Sebastián, this Basque variation of traditional cheesecake comes from northern Spain, bordering France. It was created in the kitchen of La Viña, a family-owned and operated restaurant in Spain's Basque region. 

This crustless cheesecake is world-renowned, boasting a creamy texture and signature “burnt” surface. It's made with only five ingredients. Basque cheesecake is mousse-like, airy on the inside, and caramelized on top. Its unique texture is much lighter than traditional New York-style cheesecake, and it has become popular with chefs and foodies around the globe.

Who doesn’t love chocolate?! When traveling, it’s always great to try the local gastronomy. It’s one of the best things about visiting new places! In Colombia, it’s really common to have huevos pericos (scrambled eggs), pan (rolls), and chocolate (hot chocolate) with some queso fresco. What takes this dish to the next level is when you dip the bread and cheese into the chocolate it creates mouthwatering bites with unbelievable flavors.

In honor of our Colombian and Venezuelan roots, and being major fans of the distinct flavor profile of Colombian Hot Chocolate, Daniela developed this tasty new recipe. 


While working with a chef in Southern California, Daniela learned an incredible Basque Cheesecake recipe. How to Make Colombian Hot Chocolate Basque Cheesecake

What You’ll Need


You’ll fall in love with this variation of Basque Cheesecake because it’s bursting with luxurious Colombian Hot Chocolate flavors. Combined with the creamy texture, it’s a crowd-pleaser!


Feel free to use any of your preferred brands but we opt for farm-fresh eggs, Philadelphia Cream CheeseLa Lechera Condensed Milk, and Corona Colombian Hot Chocolate.



A Quick Hint - In regards to the cream cheese! To achieve a texture that’s spot on, you’ll need the original (full-fat) version, so leave the low-fat cream cheese on the shelves.

Instructions

Prep Time:- 10 min

Cook Time - 20 Min

Cooling Time - 6+ Hours

Serves - 8



Step 1: Heat up the cream and chocolate sticks until completely dissolved. 

Step 2: Let the mixture cool on the side while mixing the rest of the ingredients. 

Step 3: Combine cream cheese and sugar with a standing mixer until smooth. 

Step 4: Add condensed milk until combined. 

Step 5: Add eggs one at a time and wait until each one is mixed well. Next add the vanilla, and then the chocolate mixture last. 

Step 6: Line a 9-inch pan with parchment paper and pour the mixture into the pan.

Step 7: Bake for 20 minutes on the top rack at 500F (260C). 

Step 8: Remove from the oven and let sit at room temperature for 30 minutes.

Step 9: Place into the refrigerator to chill for 6 hours or overnight. 

Step 10: Slice and enjoy! 

A Few Quick Tips

  • For the perfect texture, the center should jiggle. If the center isn’t wobbly, it’ll be dry and overcooked.  

  • When baking, the cheesecake will rise, similar to a souffle. But don’t be alarmed, it will fall once the cheesecake cools. 

  • For nice clean and neat slices be sure to wipe the cutting knife between cuts. Keeping a bowl with some warm water on the side will help you clean the knife between slices, allowing it to cut smoothly.
